Some games run amazingly well at even 1440p-1800p and sometimes 4K on the Series X with raytracing and 60 fps. Others run like shit and look significantly worse.
The series X can handle Starfield at 60 fps no problem. It is the Series S holding it back. The Series S has been an issue for game developers for a while with it’s weaker hardware. Microsoft keeps trying to hid it because it would hurt Series S sales. Microsoft is FORCING parity if you want your game on their xbox platform.
GPU is more of a factor at 4K than CPU. The CPU/GPU combo would probably have no issues at 1440p 120hz upscaled to 4K. Again we’ll see in a few days/weeks I’m sure , but the series x is claimed to be 4 times more powerful than the one X . The one x runs the games at 4K 60 make sense that XSXcan run at 4K 120fps .
On the Xbox's side, you're not losing anything, most games will run at 60fps anyways and you'll just benefit from lower input lag. VRR will make games with fps drops feel smoother. There are a few games which lock its resolution and performance based on your system settings, like Grid Legends and COD, but most games have manual toggles.
Yes it can hit 1440p but this is best case scenario. Expect 1080p 60fps to be standard going forward and One S version of back compat games. OG Xbox and Xbox 360 games that were previously enhanced for 4K on the One X run at 1440p 30fps or 60fps on the Series S.

But, crucially if your 1440P monitor works on a One X with the correct timings (and a lot of monitors don't), then yes you can get 1440P @ 120Hz/120 FPS on a Series X too. I can confirm 1440p in 120HZ with VRR. (At least those are the stats the display lists, not sure if really solid 120fps.) No mods installed. Special Edition with free patch from today. FPS Boost off. Series X. Monitor is native 1440p. Edit: After testing out, the game runs better with the Xbox Series X set to 4K UHD, 60HZ.
